Spaghetti with garlic, oil and chili: the perfect recipe for midnight

About 1 min read

Serves 2 · 15–20 minutes · Easy

Three ingredients plus pasta. An essential dish that seems like it needs no instructions until you burn the garlic.

Ingredients

  • 200 g spaghetti
  • 3 tablespoons extra virgin olive oil
  • 2 cloves of garlic
  • 1 small fresh chili pepper or dried chili pepper to taste
  • Salt and, optionally, parsley

Instructions

  1. Cook the spaghetti in salted water for one minute less than the time indicated.
  2. Heat the oil in a pan, add the sliced garlic and chili pepper. Keep the heat low, preventing the garlic from browning.
  3. Reserve one cup of cooking water and transfer the spaghetti to the pan.
  4. Add two or three tablespoons of water and toss for one minute, adding a little more at a time until the sauce becomes glossy.
  5. Finish with parsley, if desired, and serve immediately.

The most common mistake

It's not using too little oil: it's burning the garlic or forgetting the cooking water. The emulsion is the heart of the dish.

The ritual of scarpetta

A piece of bread and the sauce left on your plate: fare la scarpetta means mopping up those last traces. It is not a recipe, just a simple way to leave nothing good behind. A little ritual to take to your next table.
