Crispy roasted chickpeas with paprika, rosemary and lemon

How to prepare chickpeas crispy on the outside and soft on the inside: drying, temperature, and final seasoning.

Roasted chickpeas are a seemingly simple recipe, but the difference between a crispy tray and a soggy one depends on a few details. The main one isn't the amount of spices: it's the water remaining on the surface of the legumes. Drying them well before seasoning them changes the result.

Time: 35–40 minutes · Servings: 4 as an appetizer · Difficulty: easy.

Ingredients

  • 500 g cooked chickpeas, well drained
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sweet or smoked paprika
  • 1 sprig of rosemary, finely chopped
  • Zest of half an untreated lemon
  • Salt and pepper

Prepare the chickpeas

Preheat the oven to 200 °C (fan-off) or 190 °C (fan-assisted). Drain the chickpeas, rinse them if they are canned, and spread them out on a clean tea towel or paper towel. Pat them dry thoroughly. If any skin comes off, you can remove it without having to peel all the chickpeas. Try to reduce the surface moisture as much as possible.

Season without overdoing it

Pour the chickpeas into a bowl with the oil, mix well, and add a pinch of salt. You can add some of the rosemary right away, but save the paprika and lemon zest for the last few minutes or until the end: this prevents the more delicate aromas from losing their intensity during prolonged cooking.

A single layer, a wide tray

Line a baking tray with parchment paper and arrange the chickpeas in a single layer. If they are crowded together, moisture gets trapped and the result will look more like steaming. Bake for about 25–30 minutes, stirring once halfway through, until the outside is golden and dry. Cooking times vary depending on the size of the chickpeas and the oven: check after 20 minutes.

The finishing touch

As soon as they come out of the oven, transfer the chickpeas to a bowl and add the paprika, the remaining rosemary, and the lemon zest. Taste before adding more salt. For a fresher flavor, a few drops of lemon juice just before serving are enough, keeping in mind that the juice slightly softens the crispy surface.

How to serve them

They are excellent as a small appetizer, on a red cabbage salad, or over a vegetable cream, where they add a different texture. There is no need to turn them into a snack to be eaten mindlessly: even a bowl of hot chickpeas, placed in the center of the table with bread and other vegetables, can be the start of a dinner.

Why do they sometimes stay soft?

Usually due to a combination of three factors: chickpeas that are too wet, a crowded tray, or cooking that is stopped before the moisture has evaporated. Pay attention to storage as well: when they cool in a closed container, the steam can make them lose their crispness. It is best to eat them as soon as they are prepared. To reheat them, a few minutes in the oven are preferable to the microwave.

With a good drying and a wide enough tray, the recipe works without tricks: chickpeas, oil, heat, and the aroma of rosemary.
